Japansk mat!

Japansk mat er noe vi DIGGER i dette huset. Så enkelt, så smakfullt og det kjekkeste barna vet, man kan spise med hendene. På fredag laget jeg Tonkatsu og Gyoza. Fantastisk godt. Anbefales på det sterkeste.

Tonkatsu:

  • Svinefilet
  • Panko
  • Egg
  • Mel
  • Salt og pepper
  • Kinakål
  • Lime
  • Rapsolje
  • Ponzu saus (evnt lag selv)
  • Syltet ingefær (kan lages selv)

Ha egg (godt pisket), mel og panko i seperate boller. Tonkatsu er egentlig en japansk snitzel. Kryddre svinefilet med salt og pepper. Vent i mel, egg og panko. (I den rekkefølgen) Bruk en dyp stekepanne, ha i olje (ca 2 cm). Stek tonkatsu gyllne på begge sider. La du hvile i 10 min før du serverer di. Vi hadde Ponzu saus, kinakål,lime og syltet ingefær som tilbehør.

Gyoza:

  • 1 pk Gyoza papir (kjøpes i en innvandrer butikk)
  • 300 gram Svinekjøtt deig
  • 4 stk Vårløk
  • 1/2 ts Five spice
  • 1/2 ts Hvitløk (tørket)
  • Salt og pepper etter smak
  • 1/4 Kinakål
  • 1/2 dl Soya saus

Her kan man faktisk mikse litt etter hva man liker. I Japan lager alle gyoza forskjellig. Vi liker denne oppskriften.

Ha kjøttdeigen i en bolle, hakk 4 vårløk og ca 1/4del av ett kinakål. Ha alt sammen oppi bollen med kjøttdeigen. Bland godt. Blandingen skåla være litt “tørr”. Ta gyoza arkene, bruk en spiseskje til kjøttdeig blandingen. Ha midt på arket. Bruk vann rundt kantene for å lime sammen. Gyoza er en type dumpling. Så di skal stekes gyllne (med litt smør og olje) på den ene siden. Når di er det tilsetter du 1/2 glass vann og lekker fort på ett lokk. Slik damper du gyozaen.  Ta en ut for å sjekke at di er ferdige. Smak!

Tips: husk å klemme ut luften av gyozaen skikkelig når du limer di sammen.

Mange bruker ris som tilbehør også.

Da skal jeg faktisk begynne å blogge på norsk. Jeg elsker å lage mat, lager ekstremt mye forskjellig. Her legger jeg ut oppskrifter og bilder. Skal prøve å legge ut noen oppskrifter i uken. Mulig det blir noen konkurranser etterhvert.

Jeg prøver å lage enkel,sunn og god mat. Kommer noen kaker innimellom. Har man lyst,har man lov. Sukker er ikke en fiende.

Jeg heter Lena, er 29 år. 3 fantastiske barn, veldig travelt, men elsker det. Eldste på 7 år liker også å lage mat. Så ha  er mye med meg.

Chinese pepper chicken

I love Chinese fast food, i`m trying to eat healthy and in fast food there is so much salt and oil. This dish taste like Chinese fast food, but less oil and salt.

You need: Serves 4

Rice/noodles

3 chicken filet

2 cloves of garlic

1 tsp ginger paste

1 tsp whole pepper

1/2 tsp sugar

2 dl chicken/vegetable stock

3 tbsp soy sauce

2 tbsp oyster sauce

1/2 broccoli

1 red bell pepper

1 red chili

1 pk sugar peas

3 tbsp cornflour

Boil the rice/noodles.

Put the whole pepper in a mortar,smash it.

Cut the chicken in small pieces, clean the vegetables at cut them as small or big as you want them. Set them to side.

Fry the chicken, while the chicken is frying you make the sauce.

Mix the chicken stock, whole pepper, soy sauce, garlic, oyster sauce, chili, sugar, ginger paste and corn flour.

Add the vegetables to the chicken, fry some more. When the broccoli is getting tender you add the sauce mix. The cornflour is a thickener and reacts too heat. Cook for 5 min and your done!.

Pumpkin soup with Cajun chicken

Its October and the fall is here, nothing is better then a good rich soup.

You need: Serves 4

2 chicken filet

650 gram of pumpkin

2 medium size sweet potato (ore 4 carrots)

1 1/2 onion

1 tbs ginger paste

3 cloves of garlic

1 red chili (take out the seeds)

1 l chicken stock

1 can coconut milk

Natural oil

Salt

Pepper

Lemon

Coriander (fresh)

Cajun spice

Start by cleaning the pumpkin and sweet potato.

Cut in small pieces and boil until tender.

Finley chop onion, garlic and chili. Fry until golden.

Add the pumpkin and sweet potato, fry for 5 min.

Add the ginger paste and chicken stock and coconut milk.

Add salt,pepper,lemon juice and fresh coriander.

Have the soup in a blender, blend until its smooth.

Cut the chicken in small pieces and add the Cajun spice.

Fry the chicken and add it to the soup.

You can make this soup with vegetable stock and without chicken to

make it vegetarian. This dish is also lactose and gluten free.

Indian Daal (vegetarian)

Hi!

Got some more Indian food for you.

This was part of my meatless Monday project, and it is so god!

This is a vegan, lactose and gluten free dish.

You need: Serves 4

1 1/2 onion

2 cloves of garlic

2 Tbsp natural oil

2 cans of canned tomatoes

1 can of coconut milk

550 ml vegetable stock

180 gram red lentils

2 tbs dry chili

3 tbs Garam masala

2 tbs cumin

1 1/2 tbs turmeric

1 lime

Salt

Pepper

Fresh coriander

Finley chop onion and garlic cloves, fry until golden.

Add all the spices, stir well.

Add vegetable stock, coconut milk, canned tomatoes and lentils.

Let it boil under a lid for about 30 min, take the lid of the last 5-10 min so it

thickens.

When the lentils are soft the dish is done.

Add salt,pepper,lime and fresh coriander if you want to.

Serve with nan bread (see under bread categories)

Beef with tabbouleh

Beef, oh sweet joy tender beef!.

This is a dish that will make you the foodie amongst your friends.

Have some Tzatziki, natural yogurt, soy sauce ore broth sauce to it.

You need: Serves 4

4 Beef tenderloin (150 gram each)

1/4 tsp salt

1/4 tsp pepper

Butter for frying

Tabbouleh:

2 dl Bulgur

4 dl water

1 bundle of fresh parsley

1 bundle of fresh mint

1/2 onion

1 red Chili

1 lemon

1 spring onion

8 cherry tomatoes

Olive oil

salt

pepper

Cook the Bulgur for 10 min.

Rinse the Bulgur in cold water, press the water out.

Wash the herbs, finely chop them in small pieces.

Do the same to the onion,chili,spring onion and tomatoes.

Take out the seeds in the chili.

Cut the lemon in 2 and press the juice out, mix it with some olive oil,

salt and pepper.

Add the cold Bulgur to the vegetables and add the lemon oil mix.

Blend well together and set cold in the fridge.

Now the beef.

Add salt and pepper to the beef, fry them for 2-3 min on each side. (medium)

Let the beef rest for at least 10 min before you cut them in slices.

Nan Bread

Homemade Nan bread!.

Who do not like Indian food!. I LOVE Indian food.

So here is my Nan bread recipe.

You need:

Step 1:

1 pk of dry yeast

5 Tbsp of water

1 Tbsp of white caster sugar

Step 2:

450 gram of white flour

1/2 Tbsp baking soda

1/2 tsp salt

2 dl natural yogurt

1 dl water

1 Egg

3 Tbsp natural oil

Topping:

Olive oil

Coriander

Sea salt

Dry garlic

 

Step 1:

Set your oven on the highest temperature and on grill!

Mix dry yeast, caster sugar and water (finger warm), let it set for 10 min.

Step 2:

Have all the dry elements in a foodprosessor, then all the wet elements.

Mix together for 10 min until you have smooth dough.

Let the dough set for a while in a warm place. (30 min)

Take the dough out and add more flour if its to loose.

Split the dough in 6 pieces, roll out so the bread is 5 mm thick.

Put on the topping, olive oil, coriander, dry garlic and sea salt.

Put the bread on a baking pan, put the pan on the second highest level in the oven.

Bake for around 3-5 min.

Look at it often, it burns quickly.
