Indian Daal (vegetarian)

Hi!

Got some more Indian food for you.

This was part of my meatless Monday project, and it is so god!

This is a vegan, lactose and gluten free dish.

You need: Serves 4

1 1/2 onion

2 cloves of garlic

2 Tbsp natural oil

2 cans of canned tomatoes

1 can of coconut milk

550 ml vegetable stock

180 gram red lentils

2 tbs dry chili

3 tbs Garam masala

2 tbs cumin

1 1/2 tbs turmeric

1 lime

Salt

Pepper

Fresh coriander

Finley chop onion and garlic cloves, fry until golden.

Add all the spices, stir well.

Add vegetable stock, coconut milk, canned tomatoes and lentils.

Let it boil under a lid for about 30 min, take the lid of the last 5-10 min so it

thickens.

When the lentils are soft the dish is done.

Add salt,pepper,lime and fresh coriander if you want to.

Serve with nan bread (see under bread categories)
